bang bang at home (the easy way)

Get your mind out the gutter! We’re recreating Bone Fish’s famous bang bang chicken tonight! With frozen chicken bites – it’s pathetically easy.
You need:
Frozen breaded chicken (popcorn chicken or larger pieces that you’ll have to cut up after baking) [bake as directed]
1/2 cup Mayo
3 tbsp Sweet Thai Chili Sauce
Sriracha to spiciness preference
Green Onion
Lettuce

Take the chicken you baked and toss it in the already combined sauces. Drop the saucy chicken onto a bed of lettuce and top with green onions. Serve with chopsticks.

Crockpot pulled beef

One well planned session with the crock-pot can give you countless dinner options. Here is how I made some pulled beef in the crock pot and a few of the serving options that it set me up with for the week…

Add salt, mrs dash, and any sauce you want to a big slab of beef. This one was $10 for a little over 2 pounds.

1 can of beef broth into the crock pot

cook on low for 3-5 hours. 3 if you pierce it a lot, closer to 5 if you don’t

remove from crock pot and shred [it’s a little harder to shred than crock pot chicken, but not too bad]

Serving Options

serve over mashed potatoes and top with gravy, this one is my husband’s favorite

Mix beef with BBQ sauce and serve on a bun topped with cole slaw.

Mix beef with Cholula hot sauce to make taco meat

I’m sure there are many other options, but this is what I ended up making…How do you serve up crock pot pulled beef?

NTEN NTC Day 3

The final (most exhausting) day of NTEN NTC is over. We’ve learned all we could while we were here & tomorrow at 4am we will be in a cab on our way to the airport – homeward bound. Here are some snapshots of the day.

NTC Day 1

Yesterday was the first official day of NTEN’s Non Profit Technology Conference (NTC). We woke up to full on snow and walked to breakfast and back in it, then we had a few classes that they call break out sessions later in the morning and afternoon. These classes are really what make our trip out here worth it. The session presenters have so much knowledge and passion about helping 501(c)3’s and then the discussion times that follow are an amazing time to hear what other people who do your job at other non profits are succeeding at, struggling with or looking for help about. In the evening, after dinner we went to what NTEN calls a Science Fair, which is basically a trade show. Talked to a company we are starting a data project with next week and I kept my eye out for other org’s that specialize in Drupal planning ahead for our next website redesign and platform switch that might start as early as 2014. Here are some pics from the day.
