Some days are just awful



There’s really no way around it. Today, my real job was rough, some people were rude and I felt completely useless and unappreciated. Everyone has bad days. Today was one of those days for me. So, after work I decided to make a crappy boxed strawberry cake and listen to Both Sides Now by Joni Mitchell on repeat and feel my feelings.

Pizza Grilled Cheese

While we’re working to get out of debt and save up for a house, we are running on a super lean budget. That makes it’s way into our grocery lists and we are beans&rice-PBJ-ing our days away. So, for a bit of a change this afternoon, I whipped up some pizza grilled cheese sandwiches for lunch. Mozzarella, turkey pepperoni, and some marinara sauce for dipping. I also sliced it into strips with a pizza cutter for easy dipping. It made the toddler in my heart very happy.

Meal plans: save your sanity



20140706-084445-31485513.jpgI cannot say enough how much easier grocery shopping is with a meal plan. No matter how varied or experiential your dinners might be, having what you’re planning on making written down – cuts your grocery list making time in half. You go through each dinner, figure out what you already have on hand to make it & then add what you don’t have to the list. This saves you numerous mid-week trips to the store to get that one item you just don’t have on hand. Add some cereals, milk, coffee creamer and sandwich supplies to the list as well – and you’re good to go shopping.

It’s how I do things anyway, and it’s much easier for me this way. Give it a try and let me know how it works for you.

moonshine patio bar & grill



I’m pretty sure that moonshine patio bar and grille was made up of the combined dreams of Josh and Myself. It has this classic vibe, SERIOUS comfort food, hand made drinks even Don Draper would approve of, like an old-fashioned; not to mention popcorn (josh’s favorite thing) instead of bread waiting at your table when you arrive. The special that night was shrimp & grits, which is what I ordered and it was worth every penny. Josh got the chicken and waffles and he was a very happy man. I got a margarita and Josh got an old fashioned. There were no TV’s to distract us, making this an ideal date night destination.

We may have left weighing 1,000 pounds more than when we came in, but this place will change your life. We will be back.

Hillside Farmacy



After instagram stalking this lovely little eatery for months and months, I finally live close enough (read: in the same state) to actually eat there. Yay! Hillside Farmacy on East 11th in Austin is one of the greatest places I’ve ever eaten. The everything is local, come as you are, vibe isn’t uncommon here in Austin – but it’s executed to perfection here. It is so choice, if you have the means, I highly recommend it.

black bean enchiladas



Really this should be called, one of the FEW vegetarian dishes my husband gets excited about.
20140604-171307-61987734.jpgBlend Blend Blend a whole avocado and both cans of black beans that have been strained and rinsed. Use a heavy hand with the salt and squeeze in half the lime. If you’re NOT like me, and have a decent food processor, this shouldn’t take too long. Add some verde salsa to keep it getting smoother.

Chop Chop Chop your onion and cilantro, then sautee them with some evoo and salt until very tender, then add the can of green chilies and keep cooking until pretty soft. Squeeze in the other half of the lime. Then add this mixture slowly to the already blended black bean/avocado mixture and blend it in.
20140604-171306-61986918.jpgQuarter your string cheese and chop up your green onion. The end is in site.
20140604-171306-61986180.jpgWith your small tortillas add a quarter of the string cheese and a big scoop of the bean mixture, and then roll.
20140604-171305-61985353.jpgPlace your rolled enchiladas seam side down in a dish that has some of the red enchilada sauce on the bottom, this will keep them from sticking.
20140604-171304-61984453.jpgPour the entire can (or two cans) of enchilada sauce over the rolled tortillas, top with the shredded mozzarella and add green onion. Bake for 20 minutes on 350 and serve.

Ingredients:
flour tortillas (extra points for organic)
1/2 cup shredded mozzarella
2 string cheese sticks
2 cans of black beans (drained and rinsed)
1 whole avocado
1 can green chilies
1 large can red enchilada sauce (or two small ones)
1/2 jar verde salsa
1 white onion
handful of cilantro
1 lime
2-3 green onion sprigs
salt

P.S. If you don’t make a TON of enchiladas, you will have black bean mixture left over – this makes a great bean dip/nacho topper.

Some Dive



One thing is certain, here in Austin, there is no shortage of dive bars. I love it. So many little communities of beer connoisseurs, in their very own episode of cheers. I am also lucky enough that after a long day at the office, my husband still wants to hang out with me, and not just ‘the guys’ (who he will eventually have a very large local group of, I’m sure). So, the other night Josh picked me up after work, we drove around and found some bar, in a strip mall, that wasn’t very clearly named and just hung out.
