Today is the Day!

Today’s the day! The time has come! Everything’s packed up and we are headed west! We decided at the last minute to have me drive our Scion XB rather than tow it since neither one of us have experience towing cars. We’re going to stop in Leesburg to see my family on our way out of Florida. I’ve also decided to try and let my cats have free reign in the car instead of keeping them in a cage. They have food, a bed, and a litter box. I’ll let y’all know later what a bad idea that turned out to be.

Anyway, that’s all for now! Watch out Texas, we’re coming for ya!

Goodbyes and See you Laters

Today is my last day in the main office of my wonderful organization. They’re so awesome, that they’ve agreed to let me work remotely so I can keep working for the causes I’m passionate about (ending poverty world wide). All of Technology Services (a.k.a. the tech nerds) went out to lunch to wish me a final farewell for now. Goodbyes are hard, even when you know you’ll see them all again, but the time has come. Tomorrow morning Josh and I are leaving with the u-haul he’s packing while I sit around having lunch with my coworkers.

The last 5 months…

I have the best husband who agreed to be away from me for 4 months to acquire a new skill-set that he could build a career around, giving us a brighter future.

I have the best parents who gave us a huge, ($9k) no interest loan in order to make the whole thing happen.

I have the best cousin who volunteered to give my husband a home on the other side of the country while he was busy learning.

I have the best friend who drove me around, fed me most meals, and gave up her privacy so I could have a place to stay too while Josh was gone.

I have the best bosses who worked together to get me an independent mode of transportation (for free) while Josh was away.

I have the best in-laws who took us in when Josh came back with no idea how long we would need to stay.

I have the best company who has amazingly let me stay part of the team and work remotely as I move away to a new city.

I have the best God, who put all these things together in an insanely short period of time. He is doing great things – and I have faith that He will keep doing them.

Bring on the new! I know it will work out, because EVERYTHING already has.

All that to say, my husband has gotten a full time developer position and we are moving to Austin Texas this week!!!

More to come with a new apartment, city, group of friends, and stage in our life!

Top 10 things to put in an Easter Basket

1. Start with the basket itself. Make it a multiple meaning Easter basket. (A plant pot for the gardener, a mixing bowl for the baker, a helmet for the jock)
2. Chocolate candy (in the shape of a bunny, a cross, an egg, etc.)
3. Non-chocolate candy (I highly recommend starburst jelly beans or sweet tarts)
4. A fun little toy (water gun, play dough, whistle)
5. eggs eggs eggs (this is where you stuff the candy)
6. Green green fake grass (or green tissue paper)
7. A favorite DVD (think of the $5 bin at Walmart)
8. A pair of Easter themed panties or socks
9. An additional mini chocolate (say a yummy hello to mini snickers or butterfingers)
10. A funny shaped (over sized) Easter egg like a Darth Vader head.

With dozens of more than affordable vegan, organic, and gluten free options – there’s something for everyone here! Not to mention the fun games they keep on hand to play while you wait (not very long) for your food. Settled in the back corner of a shopping center near Commercial & Dixie Highway (next to Spicy Thai) – this hole in the wall will quickly become your favourite dining establishment! pad thai me down

Pad Thai has to be one of my top favorite foods. I mean, it’s spicy chicken and noodles, who doesn’t love that? So I decided I needed to learn to make it myself, from scratch. The skinny reason is so I can know exactly what goes in it and cut down on the chemicals, oil, and MSG that tends to hide in take-out food. The fat reason is, I need to know how to make it to satisfy those 2 am cravings after a long night of…well, anything really.

I looked on Pinterest and found so many different tweaks and recipes that I decided to keep it simple this time and work up from there. And it turned out great! I was pretty excited. To be totally honest I inhaled it before my brain registered “hey fatty, how about taking pictures?” but thankfully Adora has more forethought than I do (so you can thank her for the pic).

Homemade Pad Thai
1 box rice noodles
2 chicken breasts
2 eggs scrambled
1 cup bean sprouts
3 shallots
3 cloves garlic
2 tablespoons coconut oil

Sauce
1/4 cup fresh lime juice
1/4 cup fish sauce
1/4 cup tamarind paste
2 tablespoons sugar
red chilies

Garnish
crushed peanuts
sliced green onion
lime wedge
Sriracha

Soak rice noodles in hot water for 8-10 minutes, or until tender, then drain. In a wok or large pan, sautee diced shallots, garlic, and chicken cut up into bit sized pieces. Cook over med/high heat until chicken is cooked through and begins to brown. Remove and set aside in a bowl. In the same pan, scramble eggs, then add noodles and sauce. Stir until mixed, then add in chicken mixture. Let cook a few more minutes to marry all the flavors. Serve garnished with sliced lime, crushed peanuts, green onion, and Sriracha.

[Guest] Book Review: The Widow File



I love those books that keep you on the edge of your seat. This is one of those books. I have to admit, when I first bought the book on Kindle, I was doubtful. I mean, for all I knew it was some romance thing where the wife died and everyone spends the book feeling sad and talking about her, and you want to kill yourself afterwards. Wrong! This book is about private espionage, the CIA, murder, cover-ups, assassins, the whole nine. I seriously couldn’t put it down.

My favorite part was the literary style the author uses. S. G. Redling switches voices between the heroin who is running for her life and trying to reveal the systeries of the company she worked for, and the assassin who was hired to kill her. They meet. You sit on the edge of your seat. Your roommate laughs at you for gasping at a book (no? That was just me? Whatever). Do yourself a favor. Read it. And then do what I did and look up her other works and read those too.
