Okay, so sometimes when I’ve had a stressful day, I like to have this for dinner, or lunch, or breakfast. It’s not really anything earth shattering, but the first time I ever had it was at my bridal shower and it always seems like fanciest snack in the whole world to me. It’s a baguette, apricot jam, and sharp cheddar. It is SO delicious, like, words cannot describe, so I’m not going to try and make them.
Today was one of those days. It’s fancy snack time. Yum.

So, you take the pulled crock pot chicken that you now just always have on hand because it’s so easy and you mix it with frozen peas, carrots, and corn. Add some fresh herbs like cilantro and then add a can or two of cream of mushroom or cream of potato to that mix. Stir, add salt and pepper, pour into a frozen pie crust. Then top the whole thing with a pre-made pie crust top and bake it at 350 for an hour.
Do cut a whole in the top crust, DON’T try and cut a letter…you’ll just look like an idiot. Enjoy!

One well planned session with the crock-pot can give you countless dinner options. Here is how I made some pulled beef in the crock pot and a few of the serving options that it set me up with for the week…
Add salt, mrs dash, and any sauce you want to a big slab of beef. This one was $10 for a little over 2 pounds.
1 can of beef broth into the crock pot
cook on low for 3-5 hours. 3 if you pierce it a lot, closer to 5 if you don’t
remove from crock pot and shred [it’s a little harder to shred than crock pot chicken, but not too bad]
Serving Options
serve over mashed potatoes and top with gravy, this one is my husband’s favorite
Mix beef with BBQ sauce and serve on a bun topped with cole slaw.

I’m sure there are many other options, but this is what I ended up making…How do you serve up crock pot pulled beef?
The other day I decided to try my hand at this recipe from Lila’a Apron. I changed the recipe a bit to use what I had on hand, and added Mrs. Dash steak seasoning mix because it makes any roasted potato worth it. Josh and I decided to call this kebab bowls, because all the ingredients could go on a kebab…and I served it in a bowl…we’re remarkably creative namers. God help our children.
chop up red potato then add mrs. dash and olive oil
chop peppers and onions and add those too then add olive oil and salt
slice the sausage
add sausages and then a whole drained small jar of banana peppers

350 degrees for 45 minutes. This meal taught Josh that he doesn’t hate banana peppers…an important lesson, I think.
Next time you’re craving a little salty snack, instead of reaching for chips, try roasting some asparagus. It’s crunchy and when you roast it with a little olive oil and salt, it will become your favorite, I’m sure. Lay out the asparagus on a baking sheet, drizzle with oil and salt it up . Roast (which for those of you who don’t know – means put in the oven) at 350 for 15-20 minutes (if you preheat) or 25-30 minutes if you don’t. Then, scoop them all up Put them on a plate Enjoy as a snack while you read magazines with your cat. Or…you know, while you do whatever, everything after the roasting of the asparagus completely up to you.
You pick the proportions you want: onions, carrots, worcestershire, pepper, and big ole’ slab of beef. Crock pot it up on low for at least 8 hours, maybe 10. Serve over potatoes if you know what’s good!

If I could do this all again [and I will] I would put the meat on the bottom and cook it for a few hours before I added the onions and carrots, they were a little over cooked and soft for my preference.
Fill with water [this is a 4 cup mason jar], add cap, shake and let sit for at least 24 hours
Get another large mason jar and reusable coffee filter like this one
Action Shot! a.k.a. Blurry Shot. Carefully pour the coffee out of the Mason jar number one into mason jar number two through the filter.
Dilute the coffee 1:1 if so desired and serve with cream and sugar to taste
You can store that coffee in the fridge for about a week. Cold brewing gives you that great coffee flavor without the bitterness that icing hot coffee causes. I guarantee you’ll like this.
I think French Onion Soup sounds like a hard thing to make, but in reality, once you have the few steps memorized, you could do this in your sleep and trust me, it’s so worth the end result. You can do it, here’s how:
pick up six onions. here we have 2 white, 2 yellow, one sweet, and one red onion
chop chop chop. i like to halve twice, then slice.
melt a whole stick of butter over medium heat
onions!
add all the onions and start cooking down [add a lid]
yummy. i like to add some s+p & some worcestershire sauce at this point
add all these together in a big stock pot and turn on low [just one bay leaf will do] and about one of the small cans of water to the mix.
when the onions are slightly translucent add them to the big pot [spooning them in is the least messy way to go about it] and bring the whole thing to a boil then set to simmer.
toast some french bread slices on high broil
spoon your soup into an oven safe bowl
add bread
add cheese
back under the broil

This is seriously the best soup you’ll ever taste and this is enough to make maybe a dozen bowls. Make it for someone you like, because after they have this, they’re going to like you a WHOLE lot. Let me know how it turns out!
A trip to my sisters house is a trip to an allergy mind field. My oldest Niece, Lilly is allergic to almost everything, Avery is to some things, and the jury is still out on Weston. My champion sister has tried every possible combination of items to come to this perfect recipe of allergy free pancakes. I’m here to tell you, these taste great, rise normally, but they are gluten free, egg free, dairy free, and soy free. They are so delicious though, you’d never know.
