Allergy Free Pancakes



A trip to my sisters house is a trip to an allergy mind field. My oldest Niece, Lilly is allergic to almost everything, Avery is to some things, and the jury is still out on Weston. My champion sister has tried every possible combination of items to come to this perfect recipe of allergy free pancakes. I’m here to tell you, these taste great, rise normally, but they are gluten free, egg free, dairy free, and soy free. They are so delicious though, you’d never know. Here is the recipe she was nice enough to send me home with.

Allergy Free Pancake Batter:
1 1/4 cup Bob’s red Mill all-purpose flour
2 teaspoons baking powder
1/2 teaspoon guar gum
1/2 teaspoon of salt
1 teaspoon nutmeg
1 cup almond milk
2 tablespoons honey
1 teaspoon vanilla extract
2 tablespoons coconut oil

Serve it up and enjoy!

Crock Pot Baked Potatoes



Easy easy easy way to make a bunch of baked potatoes at once, without heating up your whole house this summer…

okay get out the potatoes, salt, olive oil and some sqaure-ish pieces of aluminum foil

add some salt and olive oil on top of the potato and wrap it up.

put 'em in there. set it to high for at least 7 hours.

It’s the 4th of July…let’s bake apple pie



Really, it’s the only sensible thing to do. This is how I do it.

Peel 6-7 apples old school style with a knife. You can use a peeler I guess, but this way makes you feel like you’re channeling every old awesome grandma that has ever baked an apple pie, so do it this way.

Slice then dice the apples and put them all in a bowl

Mix 3/4 cup brown sugar and 1 tsp. cinnamon with 1/4 all purpose flour and little lemon juice.

Pour a little more than half of this mixture over the diced apples and mix the apples (with your hands) to coat them.

Add the rest of the dry mix to the bottom of the pie crust (I use pre-made frozen crusts because I’m lazy and impatient.

Cut your top pie crust in an american shape and add it to the pie.

Brush the crust with melted butter and rub on some more cinnamon.

Then bake at 450 for 45 minutes and let sit for 20 minutes outside the oven. Maybe just stick to the lattice look, the flag didn’t turn out very well, but taste is all that matters…and it tastes like freedom.

Serve with vanilla ice cream and enjoy your holiday!

the DIY that turned in an Anthro hack



I wanted some candles out on the patio, but I had gotten some earlier and forgot that I lived in south Florida so they spent the entirety of the time they were out there in a liquid state. It wasn’t pretty. So when I spotted this oil lantern at Walmart for about $5 I went for it. But…I wanted it to be prettier. So this is how you go about making it that way:

Get bored the night before you were going to do this project and spray paint the whole thing at 10pm. [after you remove the glass]

While the body of the lantern is drying take some acrylic craft paint in the same color of your lantern and water it down a ton. Then paint the outside of the glass piece. I ended up washing off this coat here, watering it down more and repainting.

Slightly yellow color. Why? I don't know, but every vintage lantern I've seen has a coloring to the glass similar to the coloring of the lantern body. So might as well.

I can say with certainty that this is not a good project for someone who is a perfectionist. There are parts of my lantern that aren’t painted perfectly but I don’t mind, I actually prefer it that way. So, know that it won’t look flawless, but it will look amazing.

Anyway, a few days after I finished the lantern I got an email from Briana who was hanging out with me while I painted this lantern. She found this at Anthropolgie for $40. So, if you like the look but would prefer to spend 8 times as much, you can!

work wear: a new dress

On average, at any given time, it’s pretty safe to say the total cost of anything I’m wearing is around $20. Between thrifting and sticking to stores like Ross and Marshalls, the very small amount of money I have available to spend on clothes goes much much further. Today is no exception. I bought the dress this week at Ross and I was so excited about it! I think it’s beautiful, and I meant to take pictures of it before I worked all day, so it wouldn’t be wrinkled, but I totally forgot. C’est la vie. It’s still pretty, though in need of an iron. Here is the dress, a bargain at $11.99 and it has pockets. If you’re a dress without pockets, you’re not a dress for me! The shoes were on clearance at Payless a few years ago and cost me around $6.

Occasionally I stumble upon past G chats or Facebook messages between myself and a friend or Josh, that at the time were probably sincere, but now are just too funny.

This one is Josh and I on March 17th 2012. This was a month after we got married, before I was granted a little more flexible schedule. Josh was working a ton of hours at church which included the whole weekend, and during his only day off (Monday) I was at work.

Thank God for an easier schedule, who knows how sappy we would have gotten.
