moonshine chicken

This chicken has nothing to do with moonshine. But that sounds cool, right? It’s also the name of the restaurant where I first tried this amazing combination and have been meaning to recreate it for some time. Alas, the other night, I finally did. But I’ll let you look at the good stuff (the pictures) before I bother blabbing on about how to do this.

Let’s work our way up to the chicken. First, I added my asparagus and mini potatoes into a roasting dish. The purple potatoes were the largest ones so I cut them in half, so everything would roast evenly. Then olive oil and salt, and 40 minutes at 375 degrees later, they’re good to go.

So, while they’re roasting, toss your half stick of butter, your capers, some garlic (minced), and the juice of 1/2 a lemon into a tiny pot and set it on the lowest low. [I did a whole lemon and it was too lemony for me] If together for too long the lemon does weird stuff to the butter, so exercise caution.

Whisk your egg with a bit of water and dredge your raw chicken through the egg wash, and then through the almond flour. [extra points for adding salt and pepper and any other seasoning you like to the flour – on it’s own it’s not very flavorful] Then once both chicken cutlets are covered in almond flour add them to your medium-high pan with olive oil and cook all the way through.

Hopefully you timed this pretty well, starting to cook your chicken when your veggies have about 15 minutes left.

Plate the chicken, asparagus, and potatoes, then spoon your butter sauce over the chicken and serve! If you give it a try, let me know how it turns out! Happy Eating!

Ingredients:
chicken cutlets
almond flour
1 egg
capers
1/2 stick of Butter
garlic
lemon
olive oil
mini potatoes
asparagus
salt and pepper

Update on Walter: The Prince of Oklahoma

waltI feel so blessed that the girl who adopted Walter sends us updates and photos. Walter has settled into his new home and has siblings to play with all day. We miss him so much, and wish that we had been in a different position in life when we found him, so he would have been able to stay with us forever. He probably doesn’t remember us, he’s having a blast and is as happy as a dog who lives on 5 acres is supposed to be.
walt 3So, we just get to keep on missing him. I know he came to us for a reason. We were able to love on him like crazy, and pay for/administer the medication that got him back to being healthy and happy, while he gave me such great company during a time I felt very lonely. So here’s to Walt, the best dog ever and to Amanda of Oklahoma for giving him a great place to retire.

gettin’ juicy with it

So, I’m doing this cleanse for the month of February, trying to give my liver a break so it can heal itself. I’ve had some liver issues lately, and Briana came across a cleanse and invited me to do it with her. We dragged our husbands along with us and so far it’s been 9 days of no caffeine, no alcohol, and absolutely no sugar. Yes, no coffee at all, even decaf can cause some of the issues I’m trying to correct, so it’s been a long 9 days. One of the aspects of the cleanse is to start your mornings with warm lemon water, which I’ve been doing. Sleepy-Adora has been digging lemon seeds out of mugs before she even has a chance to wake up. No bueno. So, I was so excited last night when I found this adorable juicer and it was only $14, making one of the 3 things I can afford from there. This morning I gave it a try and I’m in love with it. It gets the lemon juicer out much faster and more efficiently than just squeezing slices into your mug like I’ve been doing. The smartest part is the filter, a couple of holes in the front of it keep your lemon seeds from being able to slip down into your mug.

Anyway, I think this adorable little contraption is just great. Run out and pick one up, and let me know if you enjoy it as much as I am!

Loaded Baked Potatoes

(null)
Today was one of those days where I didn’t think anything in my kitchen could be put together and make an actual meal, but I was not in the mood to grocery shop. Josh and I are fasting sugar, alcohol, and caffeine for the month of February, so our take out options are limited (everything in America, it seems, is made with sugar). Fortunately, I found the bag of organic potatoes that I had almost forgotten about and realized I could have a loaded baked potato bar ready in an hour. So, using up my green onions that were a day away from going bad, the last 4 pieces of bacon, and a tiny wedge of cheddar, we potatoed it up for our late Saturday lunch. It’s pretty basic and self explanatory, but directions are below if you need/want them.

Clothing Chronicles: Soft Pants

outfit

Tank | Cardi | Pants | Shoes | Hat | Necklace

Can we take a minute to talk about soft pants? Where was this trend when I was in college, showing up to class in pajama pants? It wasn’t cute then. Apparently, it is now. Let me break it down for you; soft pants are PJ pants with back pockets that look like they belong on dress pants. Basically, soft pants are everything good. The ease and laziness of yoga pants, without the unflattering cling to the cellulite that’s determined to stay on the back of my thighs forever. Last night we went bowling with a bunch of people from Josh’s work (it was a blast, if you haven’t been to The Goodnight – you should go to there). Anyway, I got to try my new soft pants outfit which is now the cutest outfit I own (links to where you can get each piece are above). I felt put together, but as comfortable as if I was hanging out at the house. I wore flip flops for about an hour, before rocking bowling shoes for the rest of the night. Right before we walked out of the house, I threw on my old go-to fedora that has some how stood the test of time, my new red cardigan and the Tiffany’s necklace that Josh got me for Christmas, to finish off my look. Hope you liked it and that I have inspired some of you to go shopping!

how to make a GIF from pictures

When things are slow (like they are today) I usually try to make the most of my time by doing tutorials. I learned Photoshop and a whole lot of code this way. I just think of something I’d like to know how to do, and find a video on it. Well today I was thinking about animated GIF’s and I came across this really well done tutorial on The Bold Abode on how to make a GIF from still photos. I used it to make this funny/pointless/way-too-bright rainbow GIF. Remember to make the most of your time, lovies, and never stop learning.

P-to-the-S. If you still say a hard G on GIF like, “Get out of here if you think I’m saying JIF like a choosy mom choosing peanut butter!” Then, good for you! I’m with you all the way!

What I’m reading: 01/12/15

Since I read more than I do pretty much anything else, I’ve decided to start sharing snippets of the books I’m reading with you all. Just little phrases that stick out to me.

What would it have been like to have a man love you like that? Would it have changed something fundamental in your psyche to wake up each morning knowing that you were loved, that someone wanted to touch your body even when it got all old and wrinkly? -The Last Anniversary

winter chili

It’s been in the 30’s for over a week here in Austin. For Florida kids like Josh and me, it’s an entirely new experience. Not a good one. So, we spent this freezing weekend lazing about the house and I made some much needed chili.

Ingredients:
2 cans busch’s chili beans
1 can red kidney beans (drained)
1 can corn drained
1 can diced roasted tomatoes
1/2-1 cup water
1 lb. ground beef (browned)***
1 packet chili mix powder
2-5 cloves of garlic
1 sweet onion chopped & sautéed
salt and pepper taste

Combine in a stock pot, bring up to a boil, and turn down to simmer. Simmer for a few hours.
Serve with cornbread or rice, cheddar cheese, sour cream, and green onion.

***leave out the ground beef to make vegetarian chili

Whip up a batch for yourself next time it’s cold outside and let me know how it turns out!

the blog posts you never see

IMG_0871.JPG
It’s easy to think that all the lifestyle bloggers online have it all together. All their crafts turn out perfectly, and they never seem to run out of new recipes and ideas. You only see their photoshopped and polished finished product and when you contrast it against your sink full of dirty dishes, it can be discouraging. So, I just wanted make sure you all know: half of the time I’m stacking dirty dishes to get them out of the picture I’m taking. Occasionally, like today, the dish I set out to make turns out to be HORRIBLE. I was attempting Eggs in Purgatory for the first time, and cooked it for too long, so I ended up with hard boiled eggs sitting in tomato sauce. Not good. But I learned to not do that again, Josh, like a champ, ate it anyway, and I got inspired to write this post. Stay positive, keep on trying, and be encouraged this new year. Here’s to all the things we’ll learn from mistakes we make in 2015!
