Let’s be cave people

Josh and I spent the weekend 900 feet underground in Carlsbad Caverns in New Mexico. It was last minute road trip and I’m so glad we went. You should make a point to see all the natural wonders in the U.S. (and the whole world if you can swing it). It was all so beautiful and made me feel as small as the ocean normally does. Plus, as with most National Parks, it’s SO CHEAP! We paid $10 each to hike down into this cave that goes on for miles. The New Mexico desert was pretty bright & hot, but it’s always cold & dark down in the caves. The Park Rangers seem to really enjoy working there and will pull you aside to show you cool things you might have missed, we had one shine her flashlight on a hidden (but huge) clump of Crystals that had formed under part of a cliff! There are some ‘rooms’ where the ceiling is like 90′ high and one bottomless pit. I highly recommend checking it out.

What I’m reading 06/05/15

Since I read more than I do pretty much anything else, I’ve decided to start sharing snippets of the books I’m reading with you all. Just little phrases that stick out to me.

I watched a ladybug crawl along the edge of the sink. I was pretty sure it wasn’t real – its sposts were shapes like stars. I’d left my camera in my backpack. -Made You Up

So a few weeks ago, my best friend flew all the way to Austin from San Fran to spend the last few hours of her birthday with me! (Also, you know, to visit me, see Austin, hang with the nieces & nephew, the usual reasons for a trip) Anyway, it was amazing. I can’t even express how right it felt to have my best friend in my city. If you didn’t already know I’m in a long term campaign to convince her to move here with her Husband once they start their family. I think this trip helped my cause. I had the best time, and promised Bri that I would return the favor and come visit her, which I am doing in 3 short weeks. Stay tuned for that! For now, just look how cute she is:

we moooooooooooved (again)



For two people who claim to hate moving, Josh and I sure do seem to do it a WHOLE lot. This move is mostly my fault though. I found a part of old downtown Austin that I fell in love love love with and begged Josh to move us there. He did. He’s great like that. So the Statehouse on South Congress is our new casa and I’m so happy with it. We’re in walking distance of our favorite places, so I’m actually getting out of the house regularly now. Anyway, the place is a mess and we’re drowning in boxes, so pictures will come later. Here’s one of the dining room to tide you over.

going to miami || bienvenido a miami



Well, not Miami, but back to Pompano. Today I’m hopping on a flight and headed back to Florida for a week of trainings at my real job. So, I’ll be living out of a hotel room for the next 6 days and it occurred to me the other night that this is the first time I’ll be staying at a hotel alone, without other people I know staying at the same hotel. Anyway, when I get back to Austin it will be time to move into our new apartment! So, expect a lot of posts about decorating the new space. Now, if you’ll please excuse me, I think the beach is calling my name.

pioneer woman, you win again



 

 The other day, I finally got around to making the Pioneer woman’s Sesame noodle recipe. Now, I have to say I officially understand why this lady’s blog is a massive success. This recipe was as easy as it was delicious, not to mention it’s a vegetarian dish that Josh liked! Try it out and let me know what you think!

Pork Stuffed Baked Apples



According to Instagram, I made these bad boys about 45 weeks ago and I’m just now getting around to blogging about them. So much fail. This delicious idea is worth sharing though, so let’s begin.

1. Make some stove top stuffing as directed and set aside.
2. Over medium heat sauté chopped celery, apple, and red onion until slight softened.
3. Brown ground pork with some honey, cinnamon, Rosemary, and whatever else strikes your pork-fancy.
4. Combine the pork, the sautéd onion mix, and the stove top stuffing and mix them well.
5. Figure out a way to hollow out apples. (there’s no really easy way to go about this. I cut the tops off and tried to use a knife, then a melon baller, then a spoon. The melon baller is your best bet.)
6. Stuff the hollowed out apples with the pork mix and add them to a glass baking dish with a bit of water at the bottom of it.
7. Bake at 350 for 30-45 minutes and enjoy! They tasted like Christmas, and I wasn’t mad about it.
